Excellent Crab is the straightforward one: real crab with a little cayenne behind it so the crab tastes more like crab. Wicked Good Crab is our East Coast version, spiced up with some heat. Shrimp Pleasure is made with real shrimp and nothing fishy about it — on the Gulf Coast it goes on the table at every get-together from May to September. Lobster Supreme is the special-occasion packet, made with real cooked lobster and no heat at all so nothing competes with it.
All four stir into 16 oz of sour cream and chill for an hour. Serve them cold with butter crackers and toast points, or warm them gently in a dish for a hot seafood dip.
